Thank you for choosing a Sebright Goods Casserole +. If you’ve got this far, you’re probably aware of the time and effort that has gone into making this product, using quality materials and workmanship. With the right care, your pan should last for generations to come. We promise the following steps are not too complicated and absolutely worth reading if you want to get the best out of your Casserole +. 

Three golden rules:

  1. Avoid sudden changes in temperature, as this can damage the enamel (heat up slowly on a low-mid heat, and never plunge a hot pan into cold water)
  2. No metal or scratchy utensils or tools! Wood and silicon are your friends and avoid metal scourers.
  3. Always thoroughly dry your pan before putting it away. The lip does not have an enamel coating and will be susceptible to rust if it is left damp. 

Before your first use:

Once you’ve removed all the packaging, hand wash your pan with warm soapy water to remove any dirt or dust from the manufacturing and packing process.

Wipe dry with a tea towel. 

The bottom of the pan should always be dry before touching the stove or going in the oven.


Using the pan

Avoid sudden changes in temperature

Always pre-heat your Casserole + on a low to medium heat before adding oil or butter. Do not overheat the pan when it is empty, and never allow the cookware to boil dry; it will damage the enamel's surface. 

Allow the pan to heat gradually; cast iron can hold heat more efficiently and build a much higher temperature than your average cookware, so all you need to use is a low to medium heat when cooking. This includes frying and searing.

High heat temperatures should only be used for boiling water for veggies, pasta and for reducing stocks and sauces.  

Make sure you match the pan’s base size to the hob ring to prevent overheating. Gas flames must never extend around the side of the pan.

If you do overheat the pan, you’re much more likely to burn food and have it stick to the pan. It may take a little longer to heat up than your standard saucepan, but it’s worth it!

On the stove:

The Sebright Casserole + can be used on all stove top heat sources and ovens fired by electricity, gas, oil, coal or wood.

When using any induction, gas, glass, halogen or ceramic hobs always lift the pan when moving it; never slide it, this could damage the stovetop and the base of the pan. 

Oils and fats:

The Sebright Casserole + is enamelled cast iron, so there is no need to season your cookware. Just add a glug of oil or a knob of butter before cooking, making sure it covers the base of the pan. 

Deep frying:

Due to its excellent heat retention, the Sebright Casserole + is a great pan for deep frying. 

When deep frying, make sure you only fill up to a third of the pan with oil and never leave it unattended.

Utensils:

Use soft wooden, silicone or plastic utensils when cooking with the Sebright Casserole +. Avoid using metal utensils or knives as this will damage the enamel; this includes electric beaters.

Hot handles:

The handles of the Casserole + are also made from cast iron, which means they will get hot when cooking either on the hob or in the oven. Always use a thick dry cloth or oven mitts when touching or moving the pan.. 

Always lift the handles from underneath, with your palms facing up under the cloth or oven gloves.

Heat Proof Surface:

When removing your cookware from the oven or hob, always place the cookware on a heat-proof surface, never on an unprotected surface.

Oven Use

Our cookware can be used at any oven temperature. When placing the cookware in the oven, always place it on the wire shelf or rack.


Cleaning & Care

Allow the pan to cool completely before running cold water over its surface to avoid thermal shock (which may damage the enamel).

As the Casserole + is enamelled, it is dishwasher safe. However, regular use of the dishwasher may lead to some dulling of the enamel finish. Therefore we recommend hand washing when you can (save the dishwasher for when you really can’t be bothered!).

To handwash, use warm soapy water and a non-abrasive sponge. Always make sure the pan is thoroughly dry before putting it away, especially the lip which is not enamelled and may start to rust if it is not dried properly.

If food is stuck to the pan:

  1. Fill the pan with warm soapy water and leave it to soak for 15 to 20 minutes before gently washing with a non-abrasive sponge.
  2. If it’s still not budging, add some water and simmer over a low heat. Then gently scrape the food with a wooden spoon.

If the enamel is stained:

  1. Create a paste by mixing baking soda and a splash of vinegar. Scrub the paste onto the stains with a non-abrasive sponge, rinse with warm water and repeat.

Avoid using harsh cleaning products on the enamel.
